Cawl
A wonderfully wholesome dish. The contents used to be dictated by
geographical location, i.e. if you were on the coast you might be making a
seafood cawl, inland maybe a bacon cawl, and in the hills and mountains
mainly lamb and mutton.
Bara Brith
Bara brith is a rich fruit loaf made with tea (sometimes known as 'speckled bread').
The flavour of the Bara Brith can be altered slightly by adding a few flavours such as marmalade or whiskey liquer.
Glamorgan Sausages
A different twist on the traditonal sausage, this vegetarian recipe uses
Caerphilly cheese and leek. You may wish to add some alternative
ingredients, for a Mediterranean touch mix together chopped red onion,
chopped olives, small capers, and chopped sun-dried tomatoes.
Welsh Rarebit
There are many versions of this dish. Traditionally it is served on toast, sometimes with a poached egg on top. However many chefs have taken to using the rarebit mixture for more adventurous dishes such as a topping for fillet of Welsh beef, or for fillet of roasted cod. Of course it is ideal as a vegetarian dish and is exceptionally good poured over a dish of roasted vegetables, then baked in the oven until golden.
Welsh Cakes
Welsh Cakes
Welsh cakes are a bit like a scone, baked on a griddle and with a distinctive flavour and texture, usually sprinkled with caster sugar and served hotwith butter. As an alternative you can try them with mixed dried fruit or tropical fruit
